Veggie Stuffed Peppers

Is everybody getting sick of all this snow yet?  Ummm last time I checked it was MARCH.  Ugh.  Well, if you’re stuck inside like I am today, this is the perfect recipe to warm you up–Veggie Stuffed Peppers.  I happened to find a bag of Boca frozen meat crumbles in the freezer and thought I should use them up.  They’re delicious and if you’re trying to cut back on meat, this is a great substitute!  Feel free to use any kind of meat you’d like though if you don’t want to make them veggie-friendly.  Crumbled Turkey works great as well!

Lentil Vegetable Soup

“Skinny” Mashed Potatoes

I’m a late arriver to the skinny mashed potatoes train.  I wish I had jumped aboard sooner! They are delicious!

For those of you wondering how mashed potatoes can be skinny, well let me fill you in on the not so secret substitution–cauliflower.

Say what?

Yep, you heard me.  Instead of using actual potatoes, sub them for cauliflower.

Green Protein Smoothie

Have you ever tried a green smoothie? I resisted for the longest time because of what they’re made out of–“Wait what?? There’s spinach and kale in it? Doesn’t it taste gross?

No, actually! They taste delicious!

I’m so glad I bit the bullet and finally tried one.  It was during my half marathon training and I needed a way to get more protein into my diet.  This was a great way to incorporate it.  Believe it or not, you don’t end up tasting any of the “green stuff” at all.  It takes the flavor of whatever else you want to put in it.
