London Veggie Pasta

This pasta really has nothing to do with London except that I always used to make it when I was living there.  It was cheap, healthy, and delicious.  PLUS it was easy to scale down for one person!

I was craving it the other day, so I decided to make it with a few modifications.

My family and I are trying to cut down on our sugar intake; mostly added sugars.  This left pasta and a lot of our favorite bread choices off the table.  We came to love Ezekiel bread because it was super duper healthy with very little sugar.  Then, as I was perusing the shelves at Fairway, I saw they had Ezekiel pasta–with NO added sugar! What the what?!

Why would you choose to go with Ezekiel products instead of regular wheat?  You can find all the benefits here, but just to name a few, you absorb more nutrients, there’s a greater amount of protein, the lack of sugar allows you to digest it better, and it just tastes yummy!

Of course this recipe still works with whatever pasta you have on hand!  When I was in London, I’d make it with Whole Wheat Penne.

London Veggie Pasta

1 box of Ezekiel linguine (or pasta of your choice)

1 yellow squash

5 roma tomatoes

1 white sweet onion

1 medium-sized eggplant

1 yellow squash

1 package of fresh spinach

1 Tbsp. oregano

1 tsp. Italian seasoning

1 1/2 tsp. garlic powder (or 2 cloves fresh garlic, diced)

salt and pepper to taste

drizzle of Extra Virgin Olive Oil

Get a large saucepan and sauté the eggplant, squash, and onions with a drizzle of olive oil.  In another pot, start boiling your water for the pasta.  Don’t forget to add salt for seasoning!

As the eggplant, squash and onions are cooking, dice up your tomatoes.  Add those to the pot.

The veggies will start to form their own liquid.  To help that along, squish the tomatoes with the back of your spoon and add a little more olive oil.  At this point, your water should be boiling, so go ahead and add the pasta.  (If you are using Ezekiel pasta, it cooks a lot faster, so be aware of your time.)

Once your veggies are cooked throw in the whole bag of spinach. (Whoah! Look at all that spinach!–Don’t worry, it will cook down.)

See? I told you! Add all the seasonings and give it a stir.

Add your cooked pasta and mix it all up.
