Guys. I can’t believe I’m sharing this recipe with you today. It’s my secret weapon. It can make people do anything you want. Like record a demo for you. Remember how I told you I paid my friends in cookies? Well, these are those cookies!
Regardless of whether or not you need someone to record a demo, every time I make these cookies, people rave about them. They’re perfect for the Fall and upcoming Holiday season. They’re a soft cookie–almost cake-like. My cousin said they’re almost like a muffin top of yummy goodness.

Demo-Worthy Pumpkin Cookies with Maple Glaze
Cookies:
(makes about 24 cookies)
2 1/2 cups all-purpose flour
1 tsp baking powder
1 tsp. baking soda
1 Tbsp pumpkin pie spice
1/2 tsp salt
1/2 cup unsalted butter, softened
1 1/2 cups white sugar
1 cup canned pumpkin puree
1 egg
1 tsp vanilla extract
Maple Glaze:
1 cup confectioners’ sugar
3 Tbsp maple syrup
1 tsp. vanilla extract
dash of milk
Preheat oven to 350°F. Combine flour, baking soda, baking powder, pumpkin spice, and salt; set aside.
With a mixer, cream together the butter and white sugar.
Add pumpkin, egg, and vanilla to butter mixture, and beat until creamy.
Mix in dry ingredients. Do this in one cup increments (unless you want to be covered in flour).
Drop on cookie sheet by tablespoonful’s.
Bake for 15-20 min.
Once they’ve cooled, make your maple glaze. Combine confectioners’ sugar, maple syrup, vanilla extract and milk. Add milk/sugar as needed to achieve the consistency you want (the more liquids, the more runny it will be).
I like to dip the cookies into the glaze so the cookies really get covered because, really, you can’t have too much maple glaze in your life. 🙂
Place cookies on a drying rack until the glaze has hardened. The glaze might drip off the sides as it dries, so place some paper towels underneath.
Enjoy with a nice cup of coffee or glass of milk for the kiddos 🙂
