We had so many leftovers from Robby’s Grad party. I wanted to use some of them up so I decided to make a Frittata.
A Frittata is a typical Italian dish made with eggs. It’s basically a big omelet. What I love about them is you can throw anything you want in it. My grandma used to make one every week with spinach and parmesan cheese. Frittata always reminds me of my childhood.
It’s a great meal to be had at anytime of the day. Have it for breakfast or pair it with a nice salad for lunch or dinner!
Leftover Frittata
Ingredients
12 eggs
1/4 cup milk
salt and pepper to taste
sautéed Peppers and Onions (about 1 cup)
2 Hotdogs (or any meat)
3 sliced Red Potatoes
Directions
Preheat oven to 350°F. Beat eggs and milk together in a medium sized bowl. Add salt and pepper.
Add remaining ingredients and mix well. Season with salt and pepper once more (layer the flavor!).
Spray a baking pan with non-stick spray and pour the egg mixture into the pan.
Bake for about 35-40 min. or until the center is no longer wet.
Remove from oven and enjoy!
